Special Sundays –

I love brunch with my girlfriends on Sundays, if we don’t go out for it they usually come over for one of our favourites; which is very simple & also a good healthy option for you (in moderation) :

Blueberry Pancakes with Fruit Skewers:

Time: 15 minutes



♡ 3 large eggs
♡ 115g plain flour
♡ 1 heaped teaspoon baking powder
♡ 140ml of skimmed milk
♡  a pinch of salt
♡ Fresh or frozen blueberries
♡ A cupful of grapes, apple, banana ( and anything else you like)
 You will need:
♡ 1 pint glass
♡  1 shot glass
♡ Kebab Skewers
♡ Greaseproof paper
First chop your fruit for the skewers into little pieces but not too small that when you put the skewer through they split.
Then separate the eggs, putting the whites into one bowl and the yolks into another.
Add the plain flour, baking powder and skimmed milk to the yolks ( yellow bit) and mix until it is smooth and quite thick to form your pancake batter.
Then in the other bowl, whisk the egg whites with the salt until they form stiff peaks.Pour this into the batter. Your now ready to make your pancakes!
Heat up a non-stick pan on a medium heat.
Pour your batter into the pan and cook for a couple of minutes until it starts looking golden.
Now drop in your blueberries onto the uncooked side before your flip it over. Once these look relatively set flip it over and cook until you feel they are done & both sides are golden.
If this is your first attempt. Like me my pancakes were all different sizes and didn’t look very pretty – with some practice they will do but here’s a tip for now…
Lay your pancakes out on grease proof paper once they are cooked and with a pint glass turned upside down.  Press down on to your pancake and cut away anything outside the rim. Try & do this neatly because with the offcuts you can use your shot glass to make mini pancakes for the skewers.  Then you can have fun stacking and skewing with the fruit….Voila!
